‘Soupe à l’onion gratiné’ or in English: The French Canadian version of French onion soup
… I like to believe that this is the little number who has brought the patient back on his feet and returned him safely to work today!
4 biggish onions halved and sliced thinly
Grossly crushed mustard seeds
1 bay leaf
Herbe de provence
A glug of white wine
1.5-2 litre Beef or vegetable stock (slightly more condensed than usual)
Big chunks of stale bread (a two day old baguette is perfect)
Shredded mozzarella or cheddar cheese
In a pan cook your onions slowly until they are caramelised. Then add your herbs and seeds and stir for an extra 30-60 seconds. Add your white wine (aprox ¾ cup) stir some more and then add your stock. Leave your soup to simmer gently for a little while and serve when you are ready. You may wish to taste it first and season to the liking of your taste buds.
For serving: Put a few chunks of bread in the bottom of your bowl, pour the soup on top and then add some grated cheese. Place under the grill for less than a minute and dress with little love hearts croutons! Awwwwwwww…..
